Dinnertime!

I love casual meals on a Friday evening.
Tonight's features sweet potato, some people call it kumera.
I pan fried slices of it in a little olive oil. I also pan fried some succulent portobello mushrooms.
Layered on a slice of wholegrain toast - gorgonzola cheese, sliced tomatoes, the sweet potato and mushrooms, drizzled a dressing of half mayo half plain yoghurt, topped with baby spinach and chopped roasted hazelnuts.
I steamed some asparagus and served that on the side.
Delicious!
