where I went today
I'm in training.
Walking training.
For a walk in the Himalayas (hopefully) this year.
So my friend H and I are trying to get out and do some bushwalks most weeks.
Today we went to the maze of tracks behind the Hydro Majestic hotel at Medlow Bath.
This is a very historic hotel, opened by Mark Foy in the early 1900's as a health resort.
Sadly the hotel is closed at the moment, awaiting refurbishment, and the bush tracks are much neglected. Hopefully the new plans will restore some of the tracks - or at least put in some sign posts.
The area, being right on the egde of the cliffs, is very popular with rock climbers and there are a lot of misleading tracks.
But the views down into the Megalong Valeey are incredible.

Pancake day? Yeah!
Everyone loves pancakes, right?
All except the person who has stand at the cooker cooking them?
This recipe is the solution to that problem.
Preheat oven to 200 degrees C.
Get 2 shallow cake pans.
Put 1Tbs butter in each pan and put in the oven ubtil melted but not brown.
Whisk together
4 eggs
2/3 cup milk
2/3 cup plain flour
1 tsp sugar
using whisk or your new Kenwood chef blender (like I did!)
Pour batter into hot pans.
cook for 10 mins at 200 C then reduce heat to 180 C for another 10 mins.
Make sure everyone is sitting down ready at the table, because these pancakes wait for no man!
Serve with lemon juice and sugar, or honey, or maple syrup, or fruit, or what you will.
Enjoy!

Haloumi and sweet potato salad
Sometimes I surprise myself!
I love cooking and I've got some great recipe books, but when it comes to salads I like to wing it with whatever is in the fridge/pantry.
Over the years I've created some tasty treats, but also some disasters.
But with last night's dinner I think I excelled myself.
Want to know more?
I peeled and sliced a large orange sweet potato, about 5mm thick and pan fried until tender and slightly browned.
While that was cooking - it takes a while (you can go and chat on the computer!) I tossed some mixed leaves on a plate with mini roma tomatoes, sliced cucumber, thinly sliced red capsicum and alfalfa sprouts.
I sliced a fresh fig downwards into 4 but left it joined at the base, and opened it out like a flower.
When the sweet potato was cooked I pushed it to one side of the frypan and put in some sliced haloumi cheese (we all love this soft salty Greek cheese).
Cooked the cheese on both sides until it was golden.
Then artfully arranged several slices of sweet potato and haloumi on top of the salad, sprinkle with your choice of balsamic vinegar or balsamic dressing ( I use Praise free balsamic) and a few chopped walnuts.
Serve with a nice crusty bread.

Sale and some new stuff
You know when you are just sick of seeing the same things?
I have been feeling like that about some of my jewellery, especially some necklaces that have been around for a while.
So I decided to have a clearance sale and see if I could get rid of them to make way for some lovely new creations.
I'm always a bit reluctant to lower my prices because my prices are so reasonable anyway, but maybe it will encourage some people to take the plunge!
- and I've threatened them, if they dont sell - then I will cut them up into bracelets or other things. (the necklaces not the customers!)

At The Nook at Leura, which is a craft co-operative that I belong to.

Wednesday wishlist
What is it with me and bright colours at the moment?
Is it beacuse it has been raining for 2 weeks?
Or does my mood need uplifting?
Am I trying to relive a past life?
Who knows!
Anyway I just fell in love with this vibrant cushion.
It has gorgeous Indian fabric and hopefully I'm heading to India this year, so maybe this is a taste of thing to come?
I was looking for something completely different - isnt that always the way? - when I found this stunning orange bag by tippythai.
There are so many lovely styles of bags in tippythais shop - I'd like one in every design and every colour.
But this one is the perfect summer colour and weight.
OK - something elso orange?
Well this is probabyl on the red side of orange - but how delightful is this brooch?
There are lots of really cute things in this shop and it has the best name - "inmybackyard"!
I'm so happy with my wishlist this week!
See it has lifted my spirits already - think I'll go for a skip. tralala!

What I made this week
An abundance of necklaces.
Playing with some simple designs and some chain.

Using up some large square glass beads that I've had for a while.
And decided what to do with a lovely labrodite pendant and a lapiz pendant that I bought last year.
